Almond, ricotta and orange salad

This is one of our all time favourite salads. The toasted nuts give a lovely earthy tone, while the ricotta is nice and light and the orange gives a beautiful sweet but tangy quality.

INGREDIENTS:

  • Plate full of mixed lettuce leaves
  • 1/2 cup of almonds, pan fried in coconut oil at high heat until brown and warm.
  • 1 tomato, diced
  • 1/2 orange, diced
  • 1/2 orange juice (freshly squeezed)
  • 1/2 cup of ricotta
  • 1/2 avocado
  • generous slosh of macadamia oil
  • salt and pepper to taste

METHOD:

Combine all ingredients into a salad bowl
