Asian mince with simple green salad

The quality of this salad is determined by the variety and qaulity of your lettuce leaves. We buy ours from Newcastle farmers markets from a whole heap of places and they are sensational!!

INGREDIENTS:

Mince

  • 1 tray mince of your choice
  • Olive oil (for cooking)
  • 1/4 Head of cauliflower
  • 1/2 head of broccoli
  • 1 zucchini
  • 2 garlic cloves
  • 1/2 brown onion
  • 2cm piece of ginger.
  • 6 desserts spoons of tamari or coconut amino sauce
  • Pinch of pepper
  • 1 tsp fish sauce
  • 1 Tbsp sesame oil
  • Chili flakes

Green Salad

  • Mixed lettuce leaves
  • 1 large cucumber
  • Extra virgin olive oil

METHOD:

Mince

  1. Pan fry mince in a generous lashing of olive oil until mince is brown
  2. Meanwhile, Blend cauliflower, broccoli, zuccini, garlic, brown onion and ginger until it resembles rice.
  3. Cook at 100 degrees for a few minutes until tender.
  4. Once mince is browned add tamari or coconut aminos, pepper, fish sauce, sesame oil and chili flakes to taste.
  5. Add mince to rice to vegetable mixture and stil until incorporated.

Salad

  1. Peel cucumber
  2. Toss salad leaves and cucumber together with olive oil.
