Cauliflower, cabbage, macadamia and blueberry salad with mustard dressing

INGREDIENTS:

  • Cauliflower
  • Cabbage
  • Macadamias
  • Blueberries

Mustard dressing…

  • 1 tablespoon of Dijon
  • 5 tablespoons of olive oil
  • Salt to taste
  • 1/4 of a lemon’s juice
  • Shake and serve

METHOD:

  1. In a blender or food processor, blend Cauliflower into small pieces that resemble a rice-like consistency
  2. Chop cabbage and cook on a medium heat with olive oil until just cooked
  3. Toast macadamias until golden
  4. Wash blueberries and serve on top of the veg.
  5. Combine salad ingredients and top with mustard dressing
