Vegetable Frittata

INGREDIENTS:

  • 2 onions
  • 2-4 cloves garlic chopped finely
  • 1 long red chilli chopped finely
  • Big bag of baby spinach
  • 2 Zucchini grated
  • Large piece pumpkin or sweet potato grated
  • 1 tbsp coconut flour
  • 6 – 8 eggs whisked
  • Parmesan cheese (optional)
  • Salt and pepper

METHOD:

  1. Cook the onions, garlic and chilli until softened.  Add the big bag of spinach and place a lid on the frypan and let the spinach wilt.
  2. Meanwhile grate the zucchini and pumpkin and any other vegetable desired and place in a large bowl.
  3. Add the onion and spinach mix to the grated vegetables and mix thoroughly.
  4. Place this mix into a ceramic dish and pat down well.
  5. Sprinkle the top with parmesan cheese if desired.
  6. Whisk the eggs with the salt and pepper and coconut flour and then immediately pour over the vegetables.
  7. Bake in the oven for 45 mins or until cooked through.
